If you are eager to get this done and want confidence that it won't pull out and you can drill through - why not make a shoulder insert that installs from the bottom? No way it will pull out, dead simple, just puts a bit more work into the wood to make a counterbore.

At this point we're into T-Nut area because the fastener still needs some method of not turning.
