I think you have just put your finger on why I prefer to machine parts and then bolt them together. Bolts are much stronger that we generally assume. Getting things square and where they belong is relatively easy to do.

Couldn't possibly have anything to do with my abysmal welding skills.

More often then not I set something up by eye/hand a bit obtuse, and tack the inside corner letting the weld pull it closed and checking it with a square before tacking up the other corners then welding out. These fab tables, squares, alignment jigs etc have their place, and within that place the save a boat load of time, but for one offs and stuff, you can have more time involved in setting up all these square and jigs than just welding it. And you could STILL have a pretzle when done if you don't know what you're doing.

They're pretty cool though, and if I had a large shop and unlimited money I'd have all of it, but I have neither of those things

Yeah for someone doing a lot of fixturing, or production fab shops they are ideal, but YouTube has turned every hobbyist into thinking they need a certiflat welding table with fireball everything to do any type of welding.
 
It kills me watching a youtuber setup $2000 worth of angles and pins on a fixture table to weld up a simple rectangular frame from tubing for a shop cart. Some people have just become giant infomercials for these companies.
